Seven innovations that changed winemaking

Wine may be one of the world’s most ancient drinks, but winemaking has never stopped evolving. Over time, ingenious inventions and scientific discoveries have transformed how grapes are vinified along every step of the process. From the historic wine presses of medieval Burgundy and the oak barrels of the Roman era to Pasteur’s 19th-century fermentation research, stainless-steel tanks and the modern gyropalette, each innovation has offered greater precision in winemaking while opening new possibilities for quality and consistency.

1. The Wine Press, Burgundy, 13th century

During the Mediaeval times, Burgundy Dukes and monastic orders took the age-old wine press and updated it to super-modern standards for the time, through large, communal installations. Huge wooden beams supported levers that were up to nine meters long, while heavy stone counterweights secured by long, wooden screws, worked together to apply controlled and sustained pressure on freshly-harvested grapes. In medieval Burgundy, scaled-up winemaking was born!

2. Oak barrel, Ancient Roman era onwards

Throughout the sprawling Roman empire of ancient times, wooden barrels were used as transport and storage vessels for wine from all corners of its domain. Wood’s strength and durability made it the go-to choice for all things wine. By the time the 1400s rolled around, winemakers had started to notice that wine stored in wooden barrels undertaking long sea voyages displayed unexpected and pleasing aromas and flavors. The term “oaked” was unofficially born! From the 19th century onwards, using wooden vessels in winemaking and maturation in prestigious European winemaking countries like France, Spain, and Italy gradually became the norm. The turn of the century brought new vinification materials such as concrete, plastic, and stainless steel alternatives, but oak has retained its presence in the fine winemaking process.

3. Glass wine bottle, England, 17th century

OK – we know that glass containers of all kinds were in existence for eons before the 1600s, but a certain technological development in England took this bottle material to the next level, revolutionizing wine production. Before the first half of the 17th century, glass was widely regarded as something of a luxury item. When polymath Sir Kenelm Digby utilized coal-fired furnaces to produce thick, durable, and dark glass, a new era in wine bottle making began. Combined with increasingly reliable closures, winemaking saw a radical transformation in transport, storage, and quality retainment.

4. Sulphur dioxide, centuries of use

Sulfur dioxide has played a part in winemaking since antiquity to sterilize and prevent spoilage. The Romans lit sulfur candles for fumigation and disinfection of wine storage vessels, and, in the Middle Ages, European cellars continued this practice. The method steadily became more standardized and was routine across chief wine regions by the 19th century. Today, there are strict rules on permitted quantities, with the chemical element acting as both an antioxidant and an antimicrobial agent. Today, it remains essential for stabilizing wines and ensuring safe global transport.

5. Pasteur and fermentation science, France, 19th century

French chemist and microbiologist Louis Pasteur overhauled winemaking in the 1860s by demystifying wine fermentation. Up until then, a process shrouded in uncertainty, he drilled down and proved that living yeast cells drive wine production by converting sugar into alcohol. The chemist further ascertained that wine spoilage and vinegary character were caused by unwanted, acid-producing bacteria. Pasteur’s approach was to heat the liquid carefully, a method that killed harmful microbes without destroying the wine flavor. He also campaigned for stringent hygiene and controlled sulfur usage, transforming the unpredictable craft of winemaking into a predictable, sterile science – et voilà! The term “pasteurization” entered the English language.

The introduction of stainless-steel wine tanks and its cousin, temperature-controlled fermentation processes transformed vinification during the second half of the 20th century. Unlike traditional wooden vessels, stainless steel was neutral, very hygienic, durable, and convenient to clean. This allowed the cellar team to protect wine from unwanted, spoiling flavors and microbial contamination. When cooling systems were added, this meant fermentation temperatures were no longer left to chance, offering greater control over the process. Stainless steel also supported larger-scale, consistent production without the loss of unique expression.

7. The Gyropalette, France and Spain, 1970s

The champagne we all so enjoy today is the result of painstaking trial and error over time with riddling, or remuage, one of the most important developments. For centuries, this meticulous task was performed by hand, with experienced workers carefully turning and tilting each and every bottle of traditional-method sparkling wine in such a way as to slowly move yeast sediment into the neck before disgorging. Without it, there’d be no clear, fine, and bubbly wine! An essential step, but one that needed considerable time (many weeks) and expertise, in the 1970s, the development of the gyropalette transformed this time-consuming operation. Developed in France and quickly adopted by and finessed on an industrial scale by Spain’s Cava industry, the large, cube-shaped cage could rotate and tilt hundreds of bottles simultaneously according to a programmed sequence. Today, the process takes around a week, dramatically reducing production time while honoring the traditional bottle-fermentation method.
